Tasting notes :
Colour : clear, viscous, deep amber.
Nose : notes of dried apricot, candied orange peel, vanilla, toasted oak, cocoa, leather.
Palate : full-bodied and structured; notes of fig, honey, spices, roasted nut.
Finish : long, warming, slightly spicy with persistent oak and rancio.
Grape variety : Ugni blanc.
Crus : Fins Bois and Bons Bois.
Terroir : chalky and limestone soil.
Ageing : 2 to 3 years in French Limousin oak casks in humid cellar.
Burning :
Heavy cask burn called “alligator char”. Four toasting levels (or "charring") can be applied, and the highest was chosen here. It's a veritable carbonization of the wood,giving it the appearance of alligator skin. This allows the Cognac to penetrate deep into the oak, acquiring pronounced aromas. The resulting char also acts as an excellent filter, removing the harshest notes.
